Used just like you would use lemon or lime juice.

Used just like you would use lemon or lime juice. Same ratio of Sour AF to syrup as you would use with lemon or lime. The big difference is that you can batch with Sour AF and there is no spoilage and the flavor doesn't change at all as it would with fresh or pasteurized juice.

For craftier accounts it gives them the possibility to do fun clarified sours, stirred sour cocktails or something in a dasher bottle to acid adjust on the fly. Works really well in highballs and drinks with bubbles because the gas doesn't stick to the pulp of the juice so keeps carbonation longer and looks great.

For all those reasons, Sour AF is great in bottled or to-go cocktails as well. We've found that when you show it to bartenders or bar managers and give them that basic rundown and they start to play with it they invariably want to pick it up because it costs less than even decent pasteurized juice, but it doesn't need to be refrigerated and can live in the liquor room or on the backbar.
